What can I use the equipment for?

The Imperia pasta maker, dubbed the ‘Rolls Royce of pasta machines’ is by far the best bench top pasta maker on the market. Rolling pasta to the right thickness is easy thanks to its six-setting adjustable rollers. Feed the freshly rolled dough into the Imperia pasta maker, and slowly turn the wooden handle to create uniform, pressed sheets – perfect for lasagne, and easily cut into tagliatelle and fettuccine.

Ravioli making comes into its own with a ravioli rolling pin used to quickly and efficiently shape and seal ravioli from sheets of fresh pasta. Modelled on the original rolling tool used in Ligurian kitchens, the roller is crafted from beechwood making it hard and durable. The complete pasta making kit also contains ravioli stamps with beautiful beechwood handles. And if you’d prefer to think outside the box and shape your own ravioli the fluted pastry wheel can be used to create soft, waved edges out of homemade pasta. 

What can I use the ingredients for?

Of course, great pasta is as much about having the right ingredients as it is the right equipment. The complete pasta making kit comes with 1kg 00 flour, or ‘doppio zero’ which is what most Italian households use to make fresh egg pasta. Italian 00 flour is finely milled  from the whitest part of the grain.  Use the kit’s elegant, rustic beechwood scoop to speed up measuring out the flour.

The kit also includes 1kg durum semolina traditionally used for making dried pasta. Semolina gives fresh pasta a great taste and texture when used 50:50 with 00 flour.  It comes from processed durum wheat, which has a particularly robust kernel and is milled so that it chips into tiny, hard granules instead of being pounded into dusty flour. In 1967, a law was passed in Italy which required all dried pasta to be made from durum wheat and water, which explains why the country’s pasta is famed for its distinctive bite, texture and slightly nutty flavour.
